I've seen that happen when your destination is further than your range (and you're using nav to get there). Doesn't sound like thats what you were seeing. My guess is communication error to the infotament about SOC that fixed itself.
Contact ford customer service and have them open up a ticket for this. Customer service reps I've dealt with had been very helpful and following up and escalating on your behalf while also able to pull strings for parts, etc. You might be able to get a car payment reimbursement

Long term update: We recently went on a 2400 mile trip to San Diego, and car performed with zero issues. Whatever the problem was with the battery, 5000 miles later, it hasn't reappeared.
Back on topic: got the update today. No notification yet in the car (just says "up to date"), or in FordPass, but I have the notes app, touchscreen beep is gone, non-functioning frunk button is under "Access" (not in FordPass), CarPlay directions (doesn't work with Google Maps).

You can always turn off plug and charge and still active the EA charger through FordPass which will use that complimentary KWh. This will help you eliminate a variable. I read that most of plug and charge issues have been resolved, though, so I would consider your experience out of norm.
This is simply not true. Car knows when its plugged in and charging so it wouldn't let you run it in accessory mode if that was bad for the car. Just like it doesn't let you drive away. If you're having issues with that, take it to get serviced.
