I'm sorry to read that's your experience. It does make me appreciate my dealer that much more, then. Then loaned me an Escape for the three weeks they had my Mach-E.
Can you check with a different dealer?
In my Job 1 MME I received 2.8.2 and 2.8.3 along with the message telling me BlueCruise was installed. In my Settings -> About it says I’m licensed for hands free driving until October 9, 2022.

I had the same concern and bought a used C-Max Level 1 charger for $100 because it has a slot for a padlock on it. (And because I’d worry a whole lot less over a $100 120v only charger instead of the Mach-E’s 120/240 mobile charger.)
With the lock in place, someone could unplug the charger...
Mine is now over a year old w/ 5800 miles, built way before yours, but is also a Premium AWD SR. And even with the windshield and roof recalls (which you won't have) it's fantastic!

I used my door puller tool. It did a great job with no scuffs at all. It also gave me a reason to use it beyond the single time I had to replace the driver's interior door handle on my wife's Fusion.
I had this, too. Only it made the car wonky. Most settings can no longer be saved, my radio bar keeps reverting to three rows, but most interestingly / annoyingly is now when I approach the car with my key fob in my pocket, the door buttons light up, but the driver door won't open.
