Do you have any idea what temperature the car keeps the pack at while plugged in?

From these graphs, it looks like the battery was well below freezing even while driving. Wild! Must not be great for the longevity of the pack.

Curiously my car has 2.3.0 now but the OTA status on the web (through the script) still says failure.

Changed my vote. Installed successfully after a single failure exactly seven days ago.

1.7.1 failed four times for me. Then updated all by itself. Four days later I got 2.1.0. 2.3 has now failed.
