I decided on a track package (full front and lower part of doors, plus the rear wheel flares) and then full-car ceramic, and have been happy with it so far. So I asked for this and they came back with a quote of $2,000 dollars more making the final quote $8,000 dollars. I really feel like they pulled these numbers from their ass.

This is a great option. You save money on the PPF and the most vulnerable parts of the car are covered.I would suggest that you consider a full FRONT PPF such as XPEL, then put ceramic over the entire car, including over the PPF. If you have a garage, you could do the ceramic yourself and save a lot of $$. You could do that for about a third of the price you are talking about.
The ceramic would help keep the car clean and shiny, and the PPF on the front would prevent most rock chips. PPF on door and hatch sills is a good idea also. If you have dogs jumping up against your car, that might be another story. ?
