I had a charging issue on a 680 mile trip and I need to turn off Plug & Charge but I couldn't because I'm not the owner. Had to call my wife and she flipped the switch.

Any idea how I can switch ownership to a different person (Me!)?

I'm thinking you'll need to master reset the vehicle to transfer it to a new owner? I hope I'm wrong but I don't know.

Easy. Switch the user id on your FordPass to hers, and vice versa.

Or, log into Ford site, switch your personal info to hers, then log into hers and do the same.

Or master reset.

Buy a second Mach E, and when you take delivery, set it up in your FordPass app with you as the owner.
