I wonder what the Pony Projector Lamp is?

Turns out it may be the e-pony:

Some call them "puddle lights". They are mirror lights (mounted under the eternal mirror housing) that shed light near the door so it is easier to find in the dark. Most Ford and Lincoln vehicles have them for years, including my present 2014 Fusion Hybrid., which I have replaced the factory incandescent bulbs with bright white LEDs.

There are OEM sets that project the Ford oval and can be found at eBay. I believe that the "pony" projectors will appear later on as replacements at eBay, too, for the original Mustangs.

EDIT: eBay does sell a door set for the original Mustangs and the "Pony" projection can be blue:

I seriously doubt it can be animated. There is little space inside the mirror housing for an active LED projector. I prefer to leave it white.

And probably any other color. I changed my Mustang Ecoboost Puddle lights to Orange to go with its color scheme of Grabber Blue with Orange graphics.

It will be interesting to see if the Mustang vendors like American Muscle will pick up Mach-e mods.

For all their grumbling, those places won't want to pass up the market. If even half the hype is true, this car is going to be a winner, and I can envision a healthy aftermarket.....market. If anything, the relatively limited color palette and styling options (which are my only real gripe with the MME at this point) will leave room for 3rd parties to provide various customization choices.
