WhenI look at the settings in my iPhone 12 I see a Wifi Connection + 2 Bluetooth Connections that are associated with my Mach-E.

Why does my cellphone need 3 connections?

When does the Mach-E use a cellular connection?

Which connections does PAAK use?

No guarantee this is correct, but I think the wifi is needed as part of the setup process and I think one if the two bluetooth connections is for PAAK and the other for Sync and such.

BT
- XXXX Mach E is used for PaaK
- Mustang Mach E is for BT apps, phone/contacts sync, Sync 4a functions and to initiate CarPlay

Wifi - used for wireless CarPlay.

Note that these are between phone and car.

The car also connects to your home wifi across two Mac addresses.

What is the car wifi access point for? I connected to it and the telephone says "connected, no internet".
Its a hotspot from AT&T. You can activate it through AT&T and have a cellular hotspot active in your car.
