They talked about the responsiveness, but then in the gif it showed him turning the volume down and back up and the volume indicator only going down...

The volume changes on the initial spin but not on any of the subsequent movements.

After the initial spin, the power button flashes. This appears to turn the radio turned off which is probably why subsequent spins don't show on the volume bar. This then raises another issue - can you accidentally turn off the radio just by changing the volume to quickly?

You're right. But It looks like the side of his finger touched the screen right up against the knob, on the outside. That apparently caused the volume power (mute) to be triggered.
