I've seen all these post lately about updates and I'm wondering why I'm not seeing any of those updates myself. I have update schedule set to every day at 10 PM. Looking at the "About Sync" screen I'm showing version 21281_product revision 244.

Most of the vehicle updates lately have been to get Job 1 vehicles (built before Juneish 2021) up to date with software Job 2 vehicles have had all along, such as BlueCruise. So depending on your vehicle, the updates may not be necessary.

That only shows the Sync version, not the rest of the software. When was your car built? Only Job 1 vehicles are getting OTAs so far to catch them up with Job 2 vehicles.

Based on the sticker inside my driver door, my car was built 12/2020.

The ability to set a daily update schedule was very recently introduced to Job 1 vehicles. So it sounds as though your vehicle is already getting updates.

The latest round of BlueCruise enablement updates have begun to push to Early Access Program participants that have agreed to send detailed analytics data to Ford. Once Ford reviews those logs and allows time for unforseen issues to bubble up and be resolved, then my expectation is that they will widen the target set of vehicles for those updates. Hang tight.

Based on this chart you are at 2.3.0.
Ford Mustang Mach-E No OTA updates? 20220225_110037

What does the 'System Updates' screen show? Don't be surprised if it says 2.1. That's a known bug.
You can also tell by what features your car has.

I'm EA and have not received an update in weeks. I received 2.4.2 then 2.4.1
Only a handful of Early Access cars have been advanced beyond 2.4.2. Those of us in EA that haven’t been getting the late beta test updates (beyond 2.4.1) are waiting on a revamped version of 2.4.2 to be pushed by Ford. Once that happens all the other updates will flow fairly quickly. After that occurs successfully (and it should be successful at this point), all the non EA North America cars will start the BlueCruise PowerUp’s. Except for those stuck on 1.7.1 or earlier. They’re on an indefinite hold with no EFC time as of yet.

EU and UK PowerUp’s are another story altogether and probably beyond the knowledge of the various Ford insiders who have been kind enough to share what information they can with this forum.

Correction - most of these updates have been to get a small subset of Job 1 vehicles up to date with software Job 2 vehicles have had all along. Many Job 1 vehicles will have to wait until this first group is complete and Ford is ready to proceed further.

Seems like I am way behind. I picked up my car the first week of April 2021 and as of today my latest update is 2.1.0

You probably have 2.3. It's a known bug that it displays the wrong version. Do you have the horizontal volume indicator bar? Blocks and Tiles?
