My wife somehow managed to turn on the hazard lights and they were running for a couple hours. This warning just popped up. She went out and turned them off. The doors opened fine.. The HVB is at 80%, but she's not close to a charger. How concerned do we need to be? Why doesn't the HVB keep the 12V charged?

If everything is still working, it's probably fine. Easiest thing to do is just drive it around a little bit and it'll charge up the 12V if it needs it.

It will also recharge if you plug the car in. No need to drive it around like an ICE.

Unless something big has changed with the updates plugging in does not charge the 12v per se, the 12v will charge slowly when AC charging or if the hvb is engaged with the ignition. This is important because you can get into a situation where if you take short drives/drain the 12v and charge at 48 amps the hvb will charge faster relative to the 12v and not completely top it off. There is a salvage function to try to save the 12v if it gets too low but it's best not to rely on it. You could leave the car ignition on and all accessories, lights and HVAC off for an hour or two as well it will use little to no hvb.
