My ambient lights always defaults to orange when I start the car

I don't have this switch either, but it's still possible to set an ambient mode for driving and when the car is off.
Put the car in the accessory mode, go to the lighting setting in the General screen. Select your color. Then start the car. Now you can set the color for the selected driving mode.
