Optional tires for stock 18" Select wheels

What is the widest tire you can install on stock 18" Select wheels. From what I read width of 18" wheels is 7.5"

As second option , will the stock GT wheels fit the Select Mach-E?

The stock 18" wheels are 7.0" wide. The widest tire you can mount depends on the tire manufacturer's specifications, but some 235s and a few 245s might fit. Many 245s will not fit.

The stock wheels from any other MachE will work, as well as stock wheels from a number of Jaguars, Land Rovers, and some other Fords (but not other Mustangs, curiously).
