Will downloads still update whilst driving? Or do we need to be stationary in an open area

Great! Thank youDepends on the update. Some updates can be installed while the car is in use. In those situations the car uses an AB module system where there are 2 of certain modules and one is updated while the other is in use. Then when you turn the car off the remaining module is updated.
Other updates that impact modules that do not have a duplicate require the car to be off and not driven until the update is complete. Those are the updates that follow the schedule you set and it will warn you that the update is going to happen at the set time.
Yes, it will work. When an non-inhibit OTA is sent to a vehicle, the owner has 7 days to turn the vehicle on to allow the update process to start. A load of OTA updates have just been released in the UK for MY21 and Iām keen to get them downloaded. I tried it earlier, started with 87% SoC on the HVB and left running for 3 hours. Still had 87% SoC when I got back in the car and it was still on!
