I would not hesitate to do it. Charge to 100% before you go, and don't drive outrageous speeds on I-10.
I-10 can be a speedway and it is too easy finding yourself at 80 - 85 mph just keeping up with the flow and trying to get around all of the semis on the road, especially the two-lane section between Casa Grande and Queen Creek.
When on similar trips and I am a little nervous about range, I will find someone going a steady 70 mph and tuck in behind them (not too close, but enough for them to fight the headwind for me) and increase my range. I would only do that towards the end of the trip if things were looking a little tight. Otherwise relax and enjoy the trip, you should do fine.
