Well, I already disabled internet updates, and I've been doing fine with v3.5.3 for the last couple years.

My problem is when I take the car in once a year, the dealer applies updates for 'recalls' and 'service bulletins', and screws stuff up. This last time, they did something called recall 23B50, innocently named "Charge Cord Stuck". Later I read that this update was causing failures of one-pedal braking, which I use all the time. Can you disable that stuff? Sure, I'll pay.
