It also takes your driving habits into account, along with how you're heating your car, outside temp... etc etc etc etc.

My 90% max charge typically says about 180 on my First Edition. I'm a absolute lead foot, it's 25 degrees out (Fahrenheit), I run E-heat, heated seats and wheel. So I'm basically in the exact same ballpark as you. My 100% state of charge would render me about 198 miles.

Just a perk of EV ownership.
I have had 100% charge at 202, 214 and 219 and but I consistently get 245 miles in distance

Right. The winter driving estimates aren’t terribly accurate.

I just drove 200km last weekend and it took 100% of the battery that's a 50% range loss and it's on -7 outside

Will Mach E contine to charge up to 250 miles (Range) even though % Charge indicator says 100%?
There is more than the temperature that affects the range. If you do small trips with the car cooling between, you could easily spend over 50% of the battery on climate.
I know because that's what I do frequently. I drive patients to radiation and wait in my car with the heat on for 1/2 hour. When I look at the battery usage, it's over 50% climate. The 100% range is calculated based on that history, but if you were to leave on a long trip, you will get far more than the initial estimate since you are changing your driving history. Again, I know because I did that. I went on a 415km trip. When I started it said the range estimate was in the mid 300 km.
I did the entire trip without recharging and at the end, the car was showing 50km remaining.
