Mine thinks it cannot see my eyeballs when I laugh. Very inconvenient. Clearly, my car lacks a sense of humor. ?

This is pretty funny. Did it not dawn on you that when not looking at the road, the vehicle was prompting you to do so. It's almost as if it has IR eye trackers watching your eyes providing some feedback about watching the road were functioning as intended.

Just feed it to gemini and ask questions.
I am sure, in my case, that I was neither blocking the camera with my hands nor looking away from the road. I had a clear, unobstructed view of the sensor.

I was not changing lanes. I was not checking my mirrors. I was not checking my phone.

I was certainly watching the car right in front of me and just driving normally.

I do distinctly recall yelling at the car (yes, I know the car is an inanimate object, but, still, I yelled at it), "I AM LOOKING AT THE ROAD!!!! ...well, now I'm not because I'm looking at the flashing warning...BUT I WAS LOOKING AT THE ROAD!"; it was 1/2 comical, 1/2 scary.

I do wear glasses, so maybe that's a factor - not sunglasses, though.

Seems more like a glitch to me, or, at least, being too sensitive (i.e., when in doubt, assume the worst)

So far, just the one incident, but I've only had the car just over a week, so there's time.

Mine's also a 2023 Premium RWD Extended Range for what that's worth. (June 2023 build)

There is an update that fixes its overly sensitive nature. It's one of the OTAs that's been pushed out. If it ever goes stupid, turn it off and back on before it starts braking.

Take off the lane centering, and the alert will go away. It's a part of the Blue Cruise.

Does anybody else have the issue with their cruise control where they set it, and then a few minutes later it starts to beep and say something like "keep eyes on the road" and I think there is another warning but I can't remember exactly what it says. This has happened to me when in the blue cruise mode and also not in blue cruise. I am thinking it may get triggered by any kind of phone usage but I can't quite pinpoint the trigger yet. It makes using cruise control extremely inconvenient.

Outside of this I am absolutely loving my MME.

This made me chuckle. I've yelled at my truck countless times for this. It used to confuse the heck out of my 9 year old. Normally, when I curse while driving, it is directly at the piss-poor drivers I have to deal with living in Miami. However, the first couple of times I yelled and he looked up and saw no cars around me, he was hella confused.

This makes my heart hurt.
Pretty much everything I own I read the manual before I start using it. With the Mach-E I'm still re-reading through the manual a month later. I tell people my car is my new hobby. It's like owning a car 100 years ago, when you couldn't just get in and drive it like todays typical ICE cars.

If you use your smartphone camera, it'll pick up the infrared sensor that the eye scanner camera is using to monitor your eyeballs.

Ford uses a different location in the F150 for the eye monitoring components. You can see the infrared sensor at the top of the centerstack in the picture below. And I circled the camera itself.
There is an additional infrared sensor on the A-pillar area on the left side of the driver.
In the Mach-E it appears Ford nestled all of it in that much more compact manner and looking at you through the wheel.

The F150 cabin is obviously huge by comparison. So everything is spread out.

Do you wear glasses? Does your glasses have bifocals? I do. If I wear my prescription sunglasses that do not have bifocals, no issue. If I wear my regular glasses and the sun is somewhat bright even if not in my eyes, I get this warning a lot.

If you wear bifocals or progressive lenses with a strong enough prescription it can have trouble because those can distort your eyeballs. You should get a pair of single vision driving lenses for distance only.
