Generally in the past I’ve always use ArmorAll for the dash and other surface areas and seems to be fine. What is your favourite and why. I’d be willing try something new

Pretty much anything not Armor All... somewhat jokingly anyway. I'm sure they've got some newer products that are OK but I can't get the image of their shiny/greasy old products out of my brain and generally just avoid them.

I try to keep everything pretty light on the interior - the less strong chemicals, the better. For the most part I actually end up using a basic glass cleaner (Stoner's) after I finish the glass or something else simple like a general interior cleaner (I think the last one I got was from Chemical Guys).

I also pull my floor mats out every couple weeks and give them a light wash with the same interior cleaner and a brush.

I use Griot's Garage interior cleaner with a micro fiber towel to clean up. I have not treated the seats, the synthetic leather has stayed soft and pliable. I use a little Lexol Vinylex on other surfaces like dash and door cards using a fabric covered foam applicator (spray the applicator, not the car, to prevent overspray).

I have the GT seats are ultra suede. I do like the vegan leather as well!
