In researching the Mach-E 2025 GT, with the performance upgrade, I noticed that they now come with A/S tyres.

With that, it is certainly one less thing to worry about replacing immediately (depending on where you live)...

The front struggles for grip on mine when flooring it from a stop. And I don’t even have the performance upgrade.

Yes, sorry, I should have stated that. Thus far, they seem fine.

However, it does seem as if I hear the car more (via the driver window). But, I am unsure if its the 2025 overall (I had a 2023), or the tyres...

Without the performance upgrade, is it still 480hp, and less torque?

Only way you can get summer tires is if you order the car with the Performance Upgrade AND Machined Faced Aluminum Wheels (either the carbonized gray or bronze). Without both of those options, you get all seasons.

However, it does seem as if I hear the car more (via the driver window). But, I am unsure if its the 2025 overall (I had a 2023), or the tyres...
Ford changed the front driver and passenger windows in 2024 job 2 from acoustic laminated to the standard tempered glass like the rear side windows. Prior years were a mix of some trims having it and some not. I've heard where some 2025's had the acoustic glass but have not been able to verify it. Every '25 I've seen does not. I changed my '24 J2 tempered glass windows back to the acoustic laminated. The front windshield on most Mach-E's is acoustic laminated and is stamped SoundScreen on the right front corner.

“Summer only” tires on a GTPE was only a 2021 problem.

Starting in 2022 the all seasons became optional and now like you’ve noticed it’s the summer tires that are optional.

Either way you have had choices on tires for quite a while now.

In terms of performance, all seasons are always a compromise. Worse in the summer than summer tires and worse in the winter than winter tires. But that’s to be expected if you want one set of tires for all weather conditions.
