Hi, I finally got my update started. Its taken 5hrs so far and ive not even done the long ones (APIM, TCU etc)
am using a laptop with i5 (1.9ghz 8th Gen Processor, 16GB RAM and M.2 SSD Drive)

I have another laptop with a 12th Gen i7, 16Gb ram, would that make a difference as it seems alot of effort is in processing before the update is applied.

What cable are you using?

For the updates that ask for a USB, the quality of that drive can make a huge difference in update time.

The laptop hardware you quoted above would not make any difference in update speed. Cable and USB could make a difference though.
