Taking delivery this week and was wondering if I need to be cautious about acceleration or anything in the first few hundred miles? Dont want to damage anything.
I ran it like a rental, and it has been super reliable with 4300 miles on it.

Other than do not do donuts in wet grass you should be fine to have some fun. They are built to be driven.
Do do donuts in snow, though (with traction disabled)! My RWD Mach E is a super fun/smooth parking lot donut machine and suffered none of the issues from that mud/grass donut scenario... looks to me like mud covered some sensors/cameras and the car was also preproduction?

Oh, wow! I had a friend (Crazy Ed) that borrowwed his parents car and did the same thing on the hills of San Franciso. The car's suspension was totaled when he returned it to his unsuspecting parents. After that, he traded his prestine 1965 Mustang with a 289 and three speed for a very used VW Bug. After that, Ed disappeared and came back much mellower, thanks to advanced modern chemistry (via his doctors).

The tires need a recommended 400 Kms to unlock their full grip potential. Not a problem in the summer heat, but would be cautious in the rain around corners.
