I'll add a few other changes going from a '21 to a '25:

1. PAAK works much more consistently, including:
• Opening door on first press of the unlock button
• Walk away lock works
• Trunk closes on first button press
• The welcome puddle lamps illuminate more frequently, but still not every time

2. I do use Blue Cruise - 1.5 is a huge improvement over the 1.1 or 1.2 I had before.

3. The steering wheel heater is nowhere near as warm as it was before unfortunately, it maybe raises the temp a couple of degrees and barely warms the hands now (I had service check this out, they said it was working "as expected").

4. The trunk privacy cover now stays clipped in instead of flopping down all the time!
So it's not just me that presses buttons multiple times to activate. I thought that maybe I unknowingly had prosthetic limbs installed on my body.

Right. Point is, I was expecting an LFP battery since I only bought a 'Premium,' which appears to be a 'Select' model with interior/trim package. There was a MME-X on the lot--which I presume is for 'extended range'--but this will be a mostly 'around town' car and I wasn't going to spring for the bigger battery ($8-10K IIRC). But, unless the window sticker is lying, I got a (somewhat) extended range (88KW), hence NMC battery (again: see sticker). Or, have the 'Premium' models always gotten an NMC?

Yes, I bought the car on impulse and didn't do my homework but I'd been thinking about dipping my toes in electric for quite a while and, well, I'm not regretful (and I wouldn't touch a Tesla or import--that's just me). Afterwards, everything I read said only the 'X' and, presumably, the GTs got ER NMC batteries. I was actually happy thinking I got an LFP, since they supposedly last longer, but I'm OK with the NMC since I'll likely trade the car in in a few years as the tech improves.
LFPs don’t last longer. They are less energy dense than NMCs and more forgiving for charging to 100%. You (accidentally) made the right choice with the battery selection. As you learn about the car more you will stop worrying about the battery and enjoy driving the car. Very few (if any) informed people here worry about the battery.

I traded my '21 for a '25 over the weekend. Still getting used to it; the shift selector on the right and wipers on the left will take some getting used to. Biggest change for me is my last 2 iPhones would not connect to Apple CarPlay via Bluetooth, only via USB cable. My current iPhone (13 mini) will connect via Bluetooth.

we have had a 21 premium, then a 22 GT/PE, then a 24 premium. Today i just traded in my 25 ICE Mustang for a 25 GT, so now both my wife and I each have one. Just picked up today, couple things i noticed, it does not ask you about the alarm when you exit the vehicle like the others did, when you press the lock button on the outside door which i love, on the 25 only the driver door has it, the other 3 no longer have them. i dont like that at all. Also does not come with a sun shade for the rear of the car. I never used the frunk so smaller not an issue. In my app is says i get 3 months of bluecruise but on the window sticker it says one year included. Mine did come with the GT perf upgrade installed, hard to tell since already on it, but it is fast is all i know. Graphics and shifter will take some getting used to, especially if i drive my wifes 24 which has the other style.
