In actuality, nothing unlocks. As you approach with a key / PaaK, and get in range (1 meter of lock), you can push the button to open it. Once you unlock the driver's door, whether that unlocks the other doors for non-key/PaaK holders or not is a setting in the vehicle (unlocking all doors is a safety concern, think dark parking lot at night by yourself).

Others have posted that recent updates seem to make the door process not work as it did before, and they need to use a button on the fob. Uncertain what's causing that (i.e. is it just an update).

Yeah, door functionality changes for me, too, about a month ago maybe. Pressing and holding the lock icon no longer works for me, so I just press the lock button inside when I exit. There are some other funky things that no longer function as they once did. Oh well. Hopefully they fix with future updates. I just wish they would fix the issue with the hatch only opening a few inches unless you unlock and open a door first.

When I got the MME in late October, as I approached it, the doors would unlock, including the front passenger door, the rear doors, etc. It's set with my phone as the key. Ford Pass is installed on my phone. Everything looks right on the menus.

But in the last week, the doors are no longer unlocking when approaching the vehicle, and we must use the key.

Did a software update cause this?
It is hard to say. PAAK can be very unreliable when it comes to the car detecting the “key” and waking up to unlock the doors. And then, even if the car does wake up, sometimes it is finicky about requiring one door or another to be opened before another works.
