I need some help explaining the one pedal driving mode. When you take your foot off the gas will the car automatically come to a stop behind the car In front of you using the 360 radar

no, when you lift your foot, it just uses engine braking.

As @Pibbman was suggesting: one pedal driving is unrelated to the driver assistance and safety functions which Ford calls Co-Pilot 360.

One pedal driving means that the vehicle can moderately decelerate when you completely lift your foot from the accelerator pedal. If you turn off this function, then the rate of deceleration is significantly less. With 1PD on, you will move your foot to the brake pedal a lot less often than when 1PD is turned off.

I drive in 1PD mode. I use the brake pedal only a few times per trip instead of every single time I need to slow or stop the vehicle.
