My mach-e has shown "in-production" for a couple of weeks but a few days ago, a date showed up next to it. Why is that?

that's probably the day the modules were activated. You should probably see a built update in a week or so, unless it goes into the chip hold purgatory. you can look for more info in the built week forums.
