New owner here...going away for a few (7) days and leaving my Mach E at home. Planning on leaving with charge level around 50%, but I was wondering if I should leave the car plugged in? I'm in AZ, so temps don't get super cold. Appreciate any opinions on this...

Agree, kinda funny about that whole "burn down your house" thing.

If it's not going to be in use, there's no reason to leave it plugged in. Unplugged at 50% is the best way.

It's what Ford suggests.
Ford's suggestion is to limit your charge to not more than 90% for daily charging. That doesn't mean you should let it sit at 90% for days. For storage, they recommend leaving the battery at 50%. If it's only parked for 7 days, it doesn't really need to be "stored", but the closer to 50%, the happier the battery will be. No need to keep it at 90% for 7 days when the charge isn't going to be used.

FWIW, we just took a trip to Europe and left our MME parked outside in the cold at the airport Park ‘N Fly in Montreal. Came back and she’d lost a total of 4km range over 15 days. You’ll be fine. ?

I live in CT when temperature was around 30 degrees in my garage. I left mine unplugged at 92% SOC for 10 days while on vacation. It stayed at 92% SOC but the GOM went from 190 down to 182 miles.
