Protecting the underside - is there anything additional I should do?

I'm concerned about all the salt & sand that we'll surely be driving on (new to NH & to electric cars). I saw posts saying that nothing additional is necessary b/c of the metal or synthetic panels. But then I've also seen stuff about adding rustproofing. What's the story? Just so I understand the basics:

• Is the panel installed in order to replace undercoating?
• Are there areas around the wheels that aren't considered "undercarriage" and therefore need undercoating?
• Is there just one big panel? Is it made of metal in some cars & synthetic in others?
• If it's made of metal, doesn't it rust?
