You don't have to delete the old phone.
Add the new phone and then edit the profile to use the new phone.
If the new phone is to be a PAAK phone it will have to be configured for PAAK.
I currently have two phones configured to my car, they are both PAAK phones, and are in different profiles.

If you are getting rid of the old phone you can go into the settings on the Mach-E and remove the old phone from the car at any time.

I don't think there can be two phones connected to the same profile.
