All of a sudden, I'm getting an extremely loud, grinding type of sound when charging. I'm in AZ and it's HOT and the charging is occurring just after returning from an extended drive. Ideas?

OK, but the vehicle is not running so why would the AC be operating? Sorry, I may be missing an engineering point that may be obvious, but, obviously, I'm not an engineer.

Coolant is being pumped through the battery and on-board charger, you might be hearing some air bubbles going through the lines. Should quiet down after a couple minutes. If you suspect you're low on coolant, you'll have to pop the frunk panels to check the reservoirs. It should be fine unless you've had previous service done.

The AC is not cooling the cabin, the AC is running to run coolant in the battery and electronics.

It's very normal - I get that a lot running A/C here - had that last summer in my '22 Lightning.
This summer, it's my '23 MME doing the same at 110 degree temps this past week.

Both L2 and L3 charging will do this.

The AC cools down more than just the batt. The DC/DC is running as is the AC to DC voltage converter charging the battery. All of it is on the cooling loop/s. The AC compressor is noisy.

Try to lower your amperage if you can - I charge with 20 amps instead available 40 to avoid the AC getting turned on. Not in AZ heat though

Make sure the louvers in the front are not grinding while they opening and closing to aid cooling. The motor has plastic gears and they would grind themselves. The motor will run constantly. I had mine replaced almost a year ago.

It's normal. It is the sound of the coolant being pumped through the batteries and charging gear to keep it cool. Ours runs at full blast here in Texas when charging in the summer, especially during the middle of the day.
