Since receiving the latest power update last week (8/7) I have experienced 2 incidents of 1- Pedal turning itself off while the vehicle is shut down. Has anyone else experienced this issue?

I have never had that particular issue. Since school zones are back in effect, I HAVE gotten an
error code where one peddle driving has been shut off if I am in a long series of back to back
school zones. I turn the car off then on again and all is back to normal.

Ours has been resetting itself randomly for a year now, all 3 profiles. My F150 resets XM presets 2 or 3 times a month. The Sync 4 system is just flat out buggy. I fear it will never get fixed as Ford is set to move to Android Auto in the next year or two and there will only be 3 or 4 models for 2 or 3 years that have Sync 4.

After the latest powertrain “Over The Air” update you will have your 1 Pedal drive setting reset to the factory setting, which is off. If you are a 1 Pedal user please check to make sure your vehicle is in 1 Pedal mode by looking for the ICON in the cluster. This will be corrected in the next powertrain OTA update to retain your settings.

Please define "latest". Some of us are many behind.

I got all 3 of the 3.x.x OTA's and have not had this issue. Funny that something working right may indicate that something is wrong...

We will see. Ford addressed the first time 1 pedal quit as a known problem. And so far it has not reoccured since the random second time. I posted just to see if this was an issue happening to other and so far it is not - which is good.

I have only experience that whenever I get OTA update. Some of my settings get reset and that is one of them.

A couple of us Mach E drivers in the UK are experiencing 1-Pedal Drive disengaging while driving (rather than while the vehicle is shut down). See here:

https://www.macheforum.com/site/threads/one-pedal-mode-stops-working-without-warning.20756/

I would be pleased to hear from anyone, anywhere, who is experiencing this loss of 1-Pedal Drive while driving.

BTW, for those who are shutting down and then restarting the car, try just shifting into N (even while in motion) and then shifting back to D. For me that will re-engage 1-Pedal Drive.
