Well, I hemmed and hawed about whether to have U-Haul do it or not, but decided that if someone was going to do the cutting it would be me.
I referenced the U-Haul video posted before and it was pretty spot on:

One lesson learned was - when you use the fish wires to feed the bolts through, put a vise-grip on the dumb end while you are threading on the bolts - I lost the wire back up in the frame 3 times before I figured that out.
Also I used some "carbon fiber" edge trim around the cut in the under carriage.
