If you turn on front screen de-mist using the button next to the light control the screen de-mist comes on. When you've had enough and turn it off it leaves E-Heat, screen blower and Heated Front Screen on. Using the "soft" on off button then still leaves on heated front screen. Ford know best. I expect that if I use a mechanical switch turning it off undoes what it did when I turned it on.

Many or most will run the defrost based on temp and humidity whether you asked for it or not.

Heated screens on Ford cars are on a timer, so it's typical behaviour after you've pressed the button for it to remain on.

I think it is customary that if I operate a switch to turn something off, whatever it controls goes off.
The only exception I have is the fan on the loo.

You'd be incorrect.

For many years, when someone ran the windshield defrost, it turned on the AC compressor to remove the humidity. This goes back decades. No person turned it on or off, it did so automatically. This is similar, heat has always been applied as needed, generated from the output of the ICE engine. Now, with an EV, that heat has to be generated electrically. Giving the customer the ability to override that is there, you simply go to screen and turn it off. Of course you don't control if it turns back on by itself.
