For some reason my GTPE will top out at 88 mph and will not go above in highway traffic. Can anyone elaborate on why and how to prevent.

You probably have an oil pump failure in one of the transaxles. Do you have an OBD code reader? That would positively identify whether this is the issue or not. ??

Are you using your spare key fob? When I use that, I get the same limit, but otherwise (PAAK, primary fob) that limit is removed.

The reason for that is because at some point that spare key was programmed as a "My Key" with that speed limit (88 MPH) associated with that device.

See the Mach-e manual and search for My Key.

Look for a P0B0D or P0C2A codes. There’s quite a few threads on this. My car ended up with both the front and rear drive units replace and the HVBJB completed to fix.

drives great now though….

Probably a silly suggestion but did you check your profile to make sure the speed limiter isn't set to 88 mph?

This is probably the most logical thing alongside with the key fob setting.

Just FYI, the car sets its own limit to 88 MPH (100KM/h) when it sees a code for a stalled transaxle oil pump. ??

It's to prevent you from activating the flux capacitor and traveling back to the future.

could you also go to your account on ford.com and run a health report and get the same info?
