Dealer confirmed it was Lojack type device they "forgot" to remove.
My dealer admitted this as well, they confirmed that I didn’t opt in and they are not tracking any data.
And wanted me to come in to get it removed. But I have moved since then and am almost 11 hrs away.

Not sure how to remove myself

If you follow the cable, it is likely just shoved or zip tied under your dash somewhere. I doubt there are any other connections. They use OBD to get battery power and maybe some data. It should just be a small module.

My Hyundai dealer sent simple instructions for removing it or said I could bring it in.

If it was me, I'd follow the wire as others have suggested, find what it's connected to, see how they attached it (probably the zip tie already mentioned), cut the zip tie, and get rid of the device. It won't be any good to anyone unless it's registered. Save the trip to the dealer, there's no need! It will be a simple job as long as you don't mind laying on your back! ;)

Such hidden boxes probably cause quite a bit of parasitic drain, even if not polled remotely (inactive)? OBD2 port has constant power, even when car is locked.
