My daily driving is only about 60 miles a day. I basically go to the golf course and back. What level should I keep the car charged to? Keep it at 60% or vary the charge between 60% and 80%?

Depends on which model you have. Extended Range? AWD? RWD?
Depends on what weather you'll be expecting. 70s? 20s? - expect a 30% hit in cold weather.
Depends on how much of your driving will be highway driving - expect a 10% hit.
Depends on if the golf course has a charger for you to use.

You don't need to keep your battery at 60% generally, unless you're storing it for a long time. 80% is conservative enough. The manual recommends 90% maximum for daily use.

Extended range AWD. I will just plan on living at the 80% level. Any value in varying this or is battery memory not an issue with this tech?

Battery memory is not an issue on modern lithium ion cells. That was the nature of the older tech NiCd and NiMH batteries of the last generation. You don't need to worry about doing full discharge cycles -- in fact, it's best to keep it around 50% as much as possible if you were set on "hyperlifing" your battery. But that's impractical. Charge it and use it.

FYI there are lots of threads on this topic already. I recommend searching for them!

I'm doing 90% charge daily. And then charging to 100% any time I go on a long trip. If thats what Ford recommends, and it causes problems they can fix it without any worry of them saying I didn't maintain it properly.

I'm thinking the same (90%), at least short term. I do not even remember which one it was now, but one of my past EVs, or PHEVs did not do proper battery management (BMS) unless it was charged to 100%. If Ford says 90%, hopefully it does what it needs to do by or at 90%.
