Can I run two different widths on my front wheels?

Those wheels and offset is fine now that I know you have a bit of poke and you like it. These won't be much different than you have now. Just make sure the center bore is 63.4. If it is not, you can use a centering ring but I don't like using them. Would prefer the wheel has the proper bore size to begin with. Yes, 8.5" wide wheel is perfect for 255's.
One more question: When I enter my vehicle information in the site (link above) it says it is not compatible with the Mach E. However I feel like they always say that when I’ve looked at wheels for my Mach E’s. Is this concerning?

They are wrong. It will fit your car and that is the correct bolt pattern (5x4.25).
