Why does Mach-e maps show gas stations?

Maybe because gas stations 99% of the time are also convenience stores as well as gas stations. Most charging areas that I have been too are usually at hotels or backs of parking lots or in the middle of a town, so no place to just grab a quick drink and a snack like gas stations offer.

Ford has announced a navigation update to remove the gas stations. However, you must sign an agreement to never use these locations for bathroom breaks, or refreshments. Then, when you find a charger, if it's at a gas station, you're not allowed to use it. #FirstWorldProblems

This is why I'm looking forward to Tesla (hopefully) opening their Supercharger network in the US to non-Tesla EVs. Some of those places have bathrooms, snack stores, and lounges to chill in while charging.

Gotta get there first, and some are in very public places. And, with kids esp girls, I'd probably only do that as a last resort.
