I looked early on and did some early acceleration timing using earlier version of CarScanner, but now there are specific PIDs in the current version that enable customer display of Mach-e sensor data....
Replies #7 and #8 contain more specifics on what to look for to display Power, various temps, and other information that is BEV specific and not visible on our standard Display in the MMEs.
The CarScanner ELM ODB2 app is available both IOS and Android, I will be using it on Android with a Viecar Bluetooth 4.0 OBD2 Diagnostic Scanner for Android/iOS,BLE OBDII Code Reader, Car Scan Tool that I got on Amazon for $25 . The free version was great, but I decided to upgrade to the PRO version of the app and pay the developer a couple bucks in appreciation.
1. download/install the CarScanner app
2. settings
-> MyCars - create a profile for your MME
-> Connection - set up connection to your ODB2
-> Connection Profile - Mustang Mach-e , and apply the profile
...you may also want adjust other settings for desired units, etc.
I'll come back and add some step-by-step instructions when I can make some time to explore further.... There are 9 top level choices:

Diagnostic trouble codes -
Freeze Frame -
Noncontinuous Monitors -
