I just picked up my brand new Mach-E GT PE yesterday and have had the car for less than 24 hrs so far. So stoked right now but thought I'd share my experience and little bits of insight that may help others.
This is long/verbose. Feel free to skim or ignore.
Order/pricing/bill of sale
I ordered my Mach-E sometime around the second week of July so it's been approximately a 6-month wait for me. The ordering experience was straightforward as I knew what I wanted. GT PE (Canada only offers GT with PE package), Cyber Orange, BlueCruise/Co-Pilot360 Active. The price came out to exactly what was spec'd on the website. I knew about people being either caught off guard with surprise ADM. I was fortunate to be working with a stand-up salesman who just gave me the MSRP. I learned at pickup that the dealership has started adding market adjustment, but gave me what they promised and also recognized that I was one of their first GT orders.
I only wished that my experience with the financing person was better. In an earlier conversation on pickup day, they had mentioned "Oh, with a car of the amount you're paying you should really get the extended warranty." I didn't commit and just smiled at the time. Later on during the detailed financing conversation I found that the totals didn't add up for me. They hadn't even told me that they snuck this in! I told them "I want to see every charge itemized on paper."
Disappointingly, one more item -- wheel locks -- showed up on the bill for $145 ($35 at the local Canadian Tire shop). At this point I was pretty fed up with the finance person. She said that it's something they do for default for all vehicles and I complained. I think my sales guy heard and came in to tell her to remove it. There weren't even wheel locks installed yet since the car was only a couple of days off the truck!
Lesson here -- check their math! I'm a detailed numbers guy so I am pretty annoyed with unexplained discrepancies!
Pre-pickup/FordPass
Admittedly I was very skeptical of Ford's software experience. Based on other stories, I was kind of expecting the worst and ultimately pleasantly surprised. I had my VIN in hand prior to pickup. This was useful to check on various online databases for outstanding recalls (windshield/pano-roof/rear seatbelt etc).
I installed the FordPass app and not exactly sure what I was doing, I tried the first function which was to set up my profile in "Remote Vehicle Setup". I was able to do things like enter my name, choose my avatar, departure temperature, and drive mode preferences. I was pretty stoked to see the car welcome me by name when I sat in it for the first time with. The sales guy and the lady walking me through the features were totally surprised with this too. They had no idea this was possible.
If you use Remote Vehicle Setup, make sure you complete the workflow and the "Send" function completes. I did get stuck on one spot of the setup process where I could choose preferred radio stations. I think the list is empty for Canada.
Front license plate bracket
I'm a member of the OCD club, and was adamant that the front bracket not be installed. The front plate is required where I live so I ordered from Craig's Custom Mustang Mounts (two months ahead of time).

I saw that my sales guy had written a big sign hanging to the rear-view mirror. In big letters it said "SOLD -- do NOT install front license plate mount" This made me smile.
I was patient with the install in terms of cleaning the area. I was too impatient to wait the recommended 48hrs for the adhesive to take, but I did use a hairdryer to make sure the surface and adhesive were at optimal temperatures for bonding. Hopefully it stays set.
Some people noted that this interferes with their parking sensors because the bracket tends to place the license plate low. I haven't found this to be the case for me yet.

It looks like I got 2.1.0. It has the Sketching game, but doesn't have Tiles. The thing I really wish it had was Amazon Alexa integration. My home is "smartified" and I'm on the Amazon ecosystem so it would have been really nice to open/close the garage and control the lights from within the car.
Hoping that 2.3.0 has this. I'm just slightly worried that this feature is yet disabled for Canada.
PaaK
Again, I was expecting the worst here based on the online rants. While at the dealership I didn't have enough time to set this up so tried doing it at home. While attempting the setup it continuously failed a few times and I was starting to get annoyed.
I don't know if this was the issue but I decided deactivating/disconnecting from Apple CarPlay. The next shot at setting up PaaK went through!
I've been going between my home and the garage and at least the last 4-5 times I tried PaaK it worked without issue. Today I'm driving my car around town sans key fob. I feel this is okay since I've got the personal door access code and the backup start code setup. Worse comes to worse even if PaaK doesn't work, I can fall back on these (at least in theory!)
Again, so far PaaK has worked for me. I'm using an iPhone XR, latest iOS version.
PPF/Ceramic/Tinting
I visited a local shop and have set up an appointment to get full PPF (XPEL), Ceramic Coat on top, and the front two windows tinted with Ceramic to help with UV. Technically front window tinting is not allowed where I live, so I'll go with a very light, barely-noticeable tint.
In total, this is quite pricey. But figured I've got the brightest/loudest metallic paint color available for the car... might was well protect it.
Accessories
I ordered a charge door protector thing,... again because I'm anal.

I also went with the Tesmanian floor liners. I've had Weathertech previously but I think the Tesmanian liners go up a little higher behind the pedals. My old Weathertechs had also arrived with bends that never formed well to my old car so I've never been too thrilled with them.

The color, the attention
I haven't really taken the vehicle out much yet. I've literally put only 25km on the car since driving off the dealer lot. But I swear that each drive on the road I've had people turning their heads. I can't get enough of the facial expressions that say "What the f is that?!?!"
I live an area that supposedly has the highest per-capita penetration of EVs in North America. It’s a sea of Teslas in my area and even Taycans are daily sightings now. It's rather fun knowing that I have something kinda rare on the road still.
