I've found that if the car is parked or oriented with the windshield and dash into the sun the temperature sensor falses and superheats over the ambient temp. And when it crosses the set point the A/C will turn on... Annoying. It's like this car's automatic climate programming was written by a first year computer science student...

It wouldn't be so bad if there was a physical button to turn it off or at least if you could turn it off with a voice command (you can't), but it's a nuisance to do it via 3 button presses on the screen every time I start up in the winter (I know, I know, first world problems).
A dedicate A/C button on the main screen is coming. It's already on the 2022 cars.

It does this because it is trying to make sure the windshield doesn't fog up. AC = lower humidity = less chance of windshield fogging. It mixes heated up outside air with the low humidity air conditioned air.

Ford has a super aggressive anti fogging strategy and doesn't give you control over it...

Does the car even have a humidity sensor? I think the car just makes assumptions.
Out of almost 500 monitored sensors in the MME there are actually 2 humidity sensors that I have found listed. One for internal and one for external. If the internal humidity rises above value X the AC will tun on the lower it. Only Ford knows exactly what the value of X is right now.

Because I’m too stupid to know when my windows are fogging and take care of it myself! ?

Some people are.....they don't understand the best combination of things to get rid of fogging up windows. Granted the max defrost is a good place to start lol.

Some people have problems tying their shoes, but they still get a drivers license.

Recirc is 99% the reason for fogged windows, even when it's humid outside. Outside air with compressor is the best option to no fog. Recirc on with people inside and breathing raises humidity quickly.
Except in Florida.

Recirc 100% in other cars, no fog.

The only 2 situations that cause Foggy windows:

1. Park outside when it’s cool out (early morning/night), windows fog for a few seconds/minutes when you first start the car. Heat makes it go away.

2. Fun time in the car with your significant other.

In 26 years of driving in Florida, never once had recirc cause fog. The a/c lowers humidity in the car significantly lower than the outside air humidity.

Perhaps they have mounted a CO2 sensor instead of humidity sensor to prevent Covid-19 circulation?

There’s a saying here in Illinois that in order to get a driver's license, there are 2 requirements:
1) Be 16 years of age
2) Have a heartbeat.

I don’t know if this is the reason the AC runs, but older ICE cars use to run the ac with the defrosters. One of the other reasons besides defogging was to make sure the ac runs off season to keep the unit operating well and avoid the seals from drying out. That is what I was told a long time ago.

Most cars run the AC when in defrost.
The part about the seals is a myth. Think about home AC systems that sit all winter, every year…

Ok that makes sense. So the primary reason is to take humidity out of the air. Is there any truth that an AC can produce some heat more quickly than waiting for an ICE engine to heat up? Is that a myth too?

Yes, the compressor runs. I can feel the cold air and hear the compressor running.
Try turning the temperature settings up and the fan speed down.
