My Ford dealer actually had a quite reasonable fee for the battery and replacement. I had some Ford points in my account that I was able to use to offset part of the cost as well.

Okay, I think I need a new battery.
The battery was 11.6V at the start. I started charging it and It charged to full in 2 minutes.
I tried to update while it was charging, but It still said "battery too low."
In the meantime..before you actually go get a new battery...it won't hurt to try a BMS learned values reset to see if you can get your 12V battery to charge up. Again, it won't hurt to try.

BMS LV Reset:
Without pressing the brake pedal, press the start button to put the vehicle in Accessory mode.

With your foot off the brake, flash the high beams with the stalk 5 times, and then depress and release the brake pedal 3 times, and observe the small red battery icon in the instrument cluster flash three times to acknowledge.

Press the start button to shut the vehicle off.

Start the vehicle and go out for a drive to completely charge the 12V battery up.

I would say do not manually start the update, let it install automatically at the scheduled time. Allowing the scheduled update to proceed will pre-charge the 12V battery. Leave the car completely unplugged for this update, and do not wake or otherwise disturb the car for at least three hours ahead of the scheduled update time (10 p.m.) so it can precharge.
This is very interesting to me. Is this something specific to the EV's? I have always recommended to people to not wait and install it right away as SoC usually depletes little by little as the vehicle sits. I know you have put a lot of time and research into these things, so genuinely asking for the sake of learning. I can tell you with certainty the SoC on both of my household Ford ICE vehicles drops the longer they sit parked......espcieally my F150 that you can hear modules clicking and clacking for no apparent reason hours after I parked it.

Yes, obviously only the EVs can precharge the 12V battery, but I have been told this is what occurs with scheduled OTAs if the 12V is too low, and have seen the SoC increase in the OTA dashboard logs when the car hasn't been driven. In an ICE vehicle, the best time to install would be right after driving it.

Pretty cool. Do you know if the Powerboost trucks do this, too?
