It's not a "Check Update" time. It's when the update will install. Once the files are downloaded the car will tell you about the scheduled update the next time you shut it off, regardless of when your automatic update time is.
And that's what I'm hoping for. But trying to get them to install in the middle of the night when the 12V battery is almost guaranteed to be below the required minimum SOC is not a great strategy IMO.

Neither is setting an automatic update for a time where it might not be convenient for it to happen. If you miss the message on the screen when you make a "quick" stop at the store on the way to work and come back to your car installing a 30 minute inhibit update you're gonna have a bad day.

So what is the keep someone from stealing your car when you’re leaving it on for hours with the key in it?

You could lock it while running and open it with phone or other key.

you don't have to leave the key in it to leave the MME 'on'. you just disable the auto-off timer, lock the car, and take your phone (or fob) with you.

the larger question is :
'why do you want every single little update' ?

personally, I have seen nothing in any recent update that I want, and plenty of bugs I'm glad I did not let in since I disabled auto-updates.

I figure all the updates we're getting now are the road to nowhere the BlueCruise update. And I've gotten caught in the feeling that that will be a good thing. FOMO!

exactly...
I allowed updates to handle the HVBJB warning software, and turned off updates after my HVBJB was physically replaced.

I never wanted BlueCruise, and would not use it even if I had it.

unless there is an update that enables user-customizable instrument display, or the ability to turn off 'driver alerts' and have them stay off, I am perfectly happy sticking with the version of powerup I have. (4.2.4)
