So this hasn't happened to me (as I haven't even gotten my car yet), and it hopefully never will, but without rear winch points, what would they do if you slid on some black ice and ended up front end-first in a ditch? Get an off-road tow truck to go around the ditch and pull you out from the front, tearing the front end to shreds along the way? Or just give up and abandon the car because you can't get it out?

Seriously though, has this happened to anyone on here; and if so, how did you get it out of the ditch?

Relax, the vast majority of new cars have zero recovery points. Just pull them out by the control arms.

I put a tow hitch on my car which can be used in this scenario. Plus I use it several times a week to take my bikes to where I like to ride.

I'm mildly investigating a tow hitch just in case I might happen to fry the two-month old replacement HVBJB in my car that is not sufficiently "robust" in Ford's parlance. As far as I can tell, there is absolutely no "stealth"-like rear hitch receiver still for the MME which can be removed and put on when needed, correct?

I really don't think I need a whole bike rack production yet for my kids bikes, which still fit inside the back, but I would probably be happier with some way to grab the car from the back if (when?) I next have a junction box dumpster fire.

I am not aware of a stealth hitch. I like mine and put a cool cover on it.
