Okay so I fought CarPlay again this morning.. I thought for sure I bugged out the car somehow by plugging it in right away before the system booted and now its bonked. Tried all the things you have tired, still only would work with a USB cable.

Then I realized I have an action (which I think a lot of people use) that puts my phone into "low power" mode at 40%, the battery shows as a yellow icon. So in troubleshooting I went in and turned off low power mode and POOF Wireless CarPlay worked..

So double check your batter is not yellow showing low power mode. If that is not the issue, then I'm not sure what else to try sadly.
Unfortunately, my low power mode setting is off - so no bueno, but thanks for the suggestion and glad it worked for you. From scanning posts here and elsewhere, totally deleting Fordpass from phone and car may do the trick. But I'll leave that as a last option for now.

I had similar problems with CarPlay. I had to reset the car to get it working again. My Flex sometimes has issues with CarPlay until I upgraded the Sync version. I stopped using Wireless CarPlay because the wireless charging was never able to charge sufficiently while Wireless CarPlay was going and the phone would overheat on long trips. I've since disable wireless projection in the Sync menu and only use USB for CarPlay. Since I have to do that in the Flex it's not an inconvenience for me. Until Apple cam make a phone that does not overheat while wirelessly charging with CarPlay, I'm going to stick with the USB method. Probably jinxing myself here, but I haven't had a problem since connecting via USB for the last few months. Eventually Ford will fix the software and one day wireless CarPlay won't require so much of the phones resources to overheat the device.

Am I correct in saying that Apple CarPlay Apps must use cellular when used in the Mach-E?

I’ve used wireless CarPlay without cell service. Obviously, I only had access to downloaded media on spotify/podcasts, and setting a location in nav didn’t work until I got cell service back.
