What type of maintenance does having a Mach-E require? I know there isn’t oil changes, but is there any routine maintenance that has to be done?

Tire rotations and brakes eventually (don't forget wiper fluid)

It's all in the manual, which you can download in PDF form from owner.ford.com.

Basically, every 10,000 miles, a visual inspection and tire rotation. At 20,000 new cabin air filter. Not much.

What Rick said. I just did my 10k inspection and it was just a tire rotation and an inspection.

Is wheel alignment part of the regular maintenance? My car drove smoothly through 11k miles but this week it feels "bumpy" at all speeds, especially high speeds. Not sure if this is an alignment issue or what else it could be

No, it's not.

If you're concerned about alignment, have the dealership check it. In the first 12 months/12,000 miles, it should be no charge.

The Owners Manual also mentions a 12-month checkup on things like:
Check coolant levels, braker fluid, check the tire sealant canaster and replace per expiration date, something about a half-shaft dust boot, heater and AC hoses, and a variety of other items which are normal automobile maintenance check items. refer to page 410 of the manual for more details, but it's all pretty standard and what you would expect.

A wheel alignment is IMHO a "good practice" every so often on any car. Consider the cumulative effects of potholed streets, ice ridges on Winter streets, speed bump traverses, teenage driving, Zombie Apocalypse escapes etc. as these things may apply to your car.

The converse (a lack of...) might result in eventual tire wall blowouts - happened twice to me, years ago, on another Ford car, because the insides of my tires were slowly being abraded under certain intermittent driving conditions and unseen by me. Cause: an out-of-whack alignment. I only figured it out after the 2d blowout :(

Service schedule is also in FordPass.
If the service tech is diligent, he (she) will notice slight tire wear during rotation and suggest an alignment.

Not sure how to interpret "bumpy" but if it's a wobbly vibration you could have lost a balance weight on a tire.
