I left one side in so I have a small compartment and a large compartment. The small side works great for takeout bags.
Exactly what I did as well. For the smaller side, I'm thinking of eventually putting a 12v to 120v inverter in and running an extension cord thru the firewall and into the cabin to a 120v outlet somewhere in the center console.

I kept one of the dividers in there because it's a nice size for holding 1 bag of groceries or takeout so it doesn't fall over. The remaining area holds 2 or 3 bags upright pretty well, so it allows me to do takeout or a small grocery run without the bags falling over and spilling out all over the place.

Did I mention I take curves faster then the recommended speed?

I just ripped mine out this weekend, allowed me to fit two weekend bags in there. Still trying to figure out the proper closing procedure but as Ford’s “official” video show, just slamming it seems to work best.

I removed mine; makes the space more useful IMO and it's easy enough to put them back in if needed.

Yes, I did, almost right away.
It only took a few days for me to get frustrated with all those little cubbies. I love the wide open space much better.

I don't have mine yet but as a Chicago Bears season ticket holder I plan on filling it with ice and adult beverages (with a designated driver of course)

What? The 2021 Mach-E has no internal 120 VAC outlet? All the Ford hybrids have it since the first 2009 Escape Hybrid. My sister-in-law was surprised to see it in my 2014 Fusion Hybrid, and she used it to charge her iPhone (I only carry Android charging cables on the USB ports). See the attached PDF page from the Owner Manual.

I expect Ford to read this and add it to the 2022 Mach-E models or later.

Removed my frunk divider to hold big stuff for a while, modified it to allow the center divider to be easily pulled out and put the divider back in.

I store some tools for removing the frunk divider and getting under the beauty covers in the frunk now.

Works on its own as a cooler but the ice melts fast -- no insulation but great drainage.

Yeah... I too was disappointed that there was no 120v plug inside the Mach E as both my C-Max and Flex have one, but I knew that to be the case ~2 months ago when I started getting ready for the car to be built and delivered.
